With winter now in full swing, I notice myself wanting more “comfort” food and I’m sure you notice the same. I threw together my lentil soup one night and posted some videos of the process on my Instagram stories, and one of my good friends asked me for the recipe. I wrote things down and emailed it to her (very loosely because I didn’t measure spices) and she sent me the sweetest message yesterday, along with the picture above, telling me her 1- 1/2 year old son, who’s a very picky eater, LOVED the lentil soup! Here’s what she had to say,
“He loved it and he hates veggies! It’s definitely gonna be a “go to” to make sure he gets his veggies in!”
So with that, I thought this would be a perfect blog post for this week. Here’s to helping moms with picky eaters come to the rescue and feed their family a healthy and hearty soup!
PS- This soup makes great leftovers and I even put some in quart sized ziplocks after it cools and freeze it. It’s a great quick grab for lunch or dinner. Just heat in the microwave (out of the ziplock of course) and enjoy!
Now for what you came here for; the recipe:
Lentil Soup Recipe:
- 1 box of low sodium vegetable broth (32oz)
- 5 cups of water
- 3 or 4 celery stalks
- 3 or 4 carrots
- 1 large white onion
- 1 can diced tomatoes (oregano and basil flavored)
- 2 cups of lentils (I use green lentils)
- Basil seasoning
- Italian seasoning
- Oregano seasoning
In a pan, sauté the diced onions, carrots and celery in olive oil. Add generous amounts of Oregano, Basil and Italian seasoning. (This is what will give you tons of flavor.) Cook for about 5 minutes on medium heat. (You don’t want them too soft, still a little crunch.)
In large pot, add water and broth. Turn on high to boil. Add lentils, can diced tomatoes and then your cooked veggies. Once boiling, cook on medium heat for 1.5 to 2 hours stirring occasionally. (If starts to thicken while cooking, add another cup or 2 of water.) Add a little salt and pepper to taste along with more oregano, basil and Italian seasoning if desired.
Just a warning, be prepared to receive the “thumbs up” on this soup! It’s a real crowd pleaser and whoever you make it for will be begging you to make it time and time again….
